Here Comes the Judges
McAllen, TX – Although it’s a lot of fun, the contestants of The Fajita Cook Off are very serious about their cooking. And its not about the prize money or the custom-made trophies, its about the bragging rights.
That is why the organizers of The Fajita Cook Off take the judging process very seriously. This year, since there will be two days of competition, there will be two sets of judges. The first day is the BBQ competition sanctioned by the International BBQ Cookers Association, IBCA, with brisket, pork spare ribs and chicken. The IBCA guidelines are very specific using a double blind system and double elimination. IBCA will be sending down one of their members to officiate the proceedings. The Cook Off has enlisted, Jesse Gonzalez, owner of Circle G Enterprises in McAllen to secure judges for the final elimination “Judges Table”. He is very knowledgeable with the IBCA system as he is one of the organizers of the “Smoking on the Rio” contest in Mercedes which is also an IBCA sanctioned event.
The second day of competition will be strictly fajitas in two categories – Traditional and Gourmet. As in the past, this judging will also be blind judging with a team of local chef and restaurant owners as judges. Richard Womeldorf will again serve as The Fajita Marshall and he runs a very tight ship. The tabulation of scores is done as the judging proceeds so there is immediate notification of any ties for additional judging.
75% of all entry fees will be awarded to the top 3 places in each of the 5 categories. That means if 75 teams enter both days, over $19,000 in cash will be awarded. The winner will also receive a custom-made miniature BBQ pit trophy. The Cook Off is part of the PalmFest International Folklife Celebration, to be held on October 6 & 7 at the new McAllen Convention Center.
